The Meats Lab is a complete livestock harvest and meat processing facility. Beef cattle, pigs, and sheep animals are harvested and processed here into retail cuts of meat that are for sale to the public at the Meats Lab facility and The Farm Market. All retail cuts are wrapped or packaged by the Meats Lab and stored in a freezer until sold. The Meats Lab also makes products such as smoked products, sausages, salami, and cured products (like hams). During some holidays the Meats Lab takes orders for special cuts of meat like hams, or prime rib. It is very important to note that an inspector from the USDA is on the premises at all times during any type of harvesting or processing to see that it is done correctly, safely, and humanely. And also to see that the facility and its employees are working in a safe and sanitary environment. There are also very strict guidelines to make sure that an edible product for human consumption is being processed and packaged properly.
