
The
Dairy Processing Plant is located in the highest milk producing area of the
world. Students are provided with a practical education founded on solid
science and technology, learning from the industry as well as the classroom.
Our dairy is modeled like the progressive,
profitable dairies in California. Most of the milk produced by the dairy herd
is processed at the Danish Creamery in Fresno.
One fourth of the milk is processed at the
University dairy plant. Milk, butter, cheese and ice cream are processed by
students in this instructional laboratory and marketed to various on-campus
food services and the public at the Farm Market. The process of bottling milk
is usually accomplished on Tuesday and Friday afternoons (approximately 2 to 4
p.m.)
The Dairy and Food Processing Laboratory,
located to the west of the Dairy, is the most recent addition to facilities
for food instruction, research and processing. This laboratory provides
capability for a wide range of processing fruit, vegetables and dairy foods. A
wide array of state-of-the-art and standard equipment provide many
opportunities for cooperation among the University, students and the great
food industry of the San Joaquin Valley.
